SMELL : Intensity of citrus fruits with the scent of acacia flowers

TASTE : An open attack with grapefuit and lemon taste, the finish is vegetal, the whole gives a dry white wine

WINE PAIRING : It goes well with oysters, sea food, fish and goats’ cheese such as Valençay

GRAPE VARIETY : Sauvignon Blanc 70%, Sauvignon Rose 30%

VINIFICATION : Collected on the old wines of 25 years. The skin maceration during 10h then gentle pressing with pneumatic press. Mantained at low temperature to keep all the flavours of the grapes

MATURATION : 6 months on fine lees in stainless steel tank

SIGHT : Pale yellow with brilliant green highlights

SMELL : Intensity of exotic fruits, apricot and white flowers

TASTE : Supple and round with fruity notes, the finish is persistant and mineral

VINIFICATION : Extraction by pressing for a better balance of wine. On the other hand traditional winemaking under low temperature control to keep the aromas of the grapes

MATURATION : 5 months in stainless steel tank

SIGHT : Light pink color

SMELL : Fruity and mineral, it releases a smell of red fruits

TASTE :  Fruity, supple and balanced

WINE PAIRING : It is a great accompaniment to deli meats, mixed salads and white meats. A nice finesse for a good time to share with friends

TERROIR : Clay with flint, including silica and gravel

VINIFICATION : Putting in vats as soon as the grapes are collected, monitoring temperatures in thermoregulated vats, fermentation during 6 to 8 days.
Assembling the three grape varieties in vats after fermentation

MATURATION : 6-8 months in stainless steel tank

SIGHT : Bright red with brilliant highlights

SMELL : Red fruits, like cherry and strawberry

TASTE :  Light red wine, gamay and pinot noir bring its lightness and fruitiness while malbec, a varietal of character, serves as a link to this alliance
